Maple Ginger Roasted Grapefruit Yogurt
Enjoy this Maple Ginger Roasted Grapefruit Yogurt, which has a great mix of sweet and sour flavors. When you roast the grapefruit, it turns a little caramelized, and the maple syrup and ginger give the dish warmth and depth. A drizzle of honey and a sprinkle of granola give this breakfast or snack extra texture and sweetness.
Ingredients:
- 2 grapefruits, halved and segmented
- 2 tablespoons Coombs Family Farms maple syrup
- 1 teaspoon grated fresh ginger
- 2 cups plain yogurt
- 2 tablespoons honey
- 1/4 cup granola
- Fresh mint leaves for garnish
Instructions:
Preheat your oven to 400F 200C
In a small bowl, combine the maple syrup and grated ginger
Place the grapefruit halves on a baking sheet, cut side up
Drizzle the maple ginger mixture over the grapefruit segments
Roast the grapefruit in the preheated oven for 10-12 minutes, or until they begin to caramelize
While the grapefruit is roasting, divide the plain yogurt into two serving bowls
Once the grapefruit is done, remove it from the oven and let it cool slightly
Top each bowl of yogurt with the roasted grapefruit segments
Drizzle honey over the yogurt and grapefruit
Sprinkle granola over the top for added crunch
Garnish with fresh mint leaves for a burst of freshness
Serve immediately and enjoy
