Easy Summer Veggie Lentil Sloppy Joes
These Vegan Lentil Sloppy Joes are a perfect summer meal, packed with hearty lentils and colorful veggies. Theyre easy to make and bursting with flavor, making them a crowd-pleasing option for your next cookout or weeknight dinner.
Ingredients:
- 1 cup dry green lentils
- 2 cups water
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 zucchini, diced
- 1 cup corn kernels
- 1 cup tomato sauce
- 2 tablespoons tomato paste
- 1 tablespoon maple syrup
- 1 tablespoon soy sauce
- 1 teaspoon chili powder
- 1/2 teaspoon smoked paprika
- Salt and pepper, to taste
- Hamburger buns, for serving
Instructions:
Bring the water to a boil in a medium-sized saucepan
Turn down the heat, cover, and simmer for 20 to 25 minutes, or until the lentils are soft but not mushy
Warm up the olive oil in a big pan over medium-low heat
It will take about two to three minutes of cooking after adding the onion and garlic
After you add the corn, zucchini, and bell pepper, cook for another 5 minutes or until the vegetables are soft
To the cooked lentils, add tomato sauce, tomato paste, maple syrup, soy sauce, chili powder, and smoked paprika
Mix everything together
Add pepper and salt to taste
Stir the mixture every so often for 10 minutes while it simmers until it gets thick
Put the lentil sloppy joe mix on hamburger buns to serve
