Enchilada Pasta Skillet
This Enchilada Pasta Skillet has the tastes of enchiladas and the ease of a pasta dish made in a skillet. Its filling, tasty, and great for a quick dinner during the week.
Ingredients:
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can 10 oz red enchilada sauce
- 1 can 14
- 5 oz diced tomatoes
- 1 cup chicken broth
- 1 cup uncooked pasta such as penne or rotini
- 1 cup shredded cheese Mexican blend or cheddar
- Salt and pepper to taste
- Chopped fresh cilantro for garnish optional
Instructions:
Warm up the ground beef in a big pan over medium-low heat until it turns brown
Put minced garlic and diced onion in the pan
Cook until the onion turns clear
Add the enchilada sauce, diced tomatoes, chicken broth, and pasta that hasnt been cooked yet
Bring the mixture to a simmer, cover, and cook, stirring every now and then, for about 15 minutes, or until the pasta is soft
Put some shredded cheese on top of the cooked pasta and cover the pan until the cheese melts
Add pepper and salt to taste
If you want, add chopped cilantro as a garnish before serving
