Healthy Weeknight Chicken
This dinner recipe is quick and healthy, making it perfect for busy weeknights. This healthy meal is made in a pressure cooker with quinoa, cherry tomatoes, broccoli, and juicy chicken.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup quinoa, rinsed
- 1 cup chicken broth
- 1 cup cherry tomatoes, halved
- 1 cup broccoli florets
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
Salt, pepper, and garlic powder can be used to season chicken breasts
Put olive oil in the pressure cooker and set it to saut mode
Cook the chicken breasts until they are golden brown on both sides
Put broccoli, cherry tomatoes, quinoa, and chicken broth in the pot
Turn on high pressure for 8 minutes and then close the lid
When its done, let go of the pressure and carefully open the lid
Put chicken on top of quinoa and vegetables
Before serving, sprinkle with fresh parsley
