Pesto Chicken & Mozzarella Grilled Cheese Sandwich with Spinach
This grilled cheese sandwich combines the rich flavors of pesto, tender chicken, creamy mozzarella cheese, and fresh spinach leaves for a delightful twist on a classic favorite.
Ingredients:
- 2 slices of bread
- 2 tablespoons pesto sauce
- 2 slices of cooked chicken breast
- 2 slices of mozzarella cheese
- Handful of fresh spinach leaves
- Butter or olive oil for grilling
Instructions:
Cover one side of each slice of bread with pesto sauce
Put a mozzarella cheese slice on each piece of bread so that the pesto side is facing up
On top of the cheese slices, put spinach leaves
Place the chicken breast slices that have been cooked on top of the spinach
Put the other slice of bread on top of the sandwich, pesto side down
Set the pan on medium heat and add a little olive oil or butter
For about three to four minutes on each side, grill the sandwich until the bread is golden brown and the cheese melts
Once its done, take it out of the pan and let it cool down a bit before serving
