Smoked Prime Rib

Savor the regal flavors of smoked prime rib, where a combination of garlic, rosemary, and thyme amplifies the meats richness. A delightful smokiness is imparted by smoking, elevating every mouthful to a royal experience.

Ingredients:

  • 1 prime rib roast about 4-5 pounds
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • Salt and black pepper to taste
  • Wood chips for smoking hickory or mesquite
  • Water for soaking wood chips

Instructions:

Set the smokers temperature to 225F 107C

To make a rub, combine olive oil, minced garlic, thyme, rosemary, salt, and black pepper in a small bowl

Distribute the mixture evenly over the roast prime rib

To help the flavors seep in, let the roast sit at room temperature for half an hour

For at least half an hour, soak wood chips in water

To add more smoke flavor, place the soaked wood chips in the smoker box or directly on the charcoal

After positioning the prime rib on the smoker grates, shut the cover

Smoke the prime rib for approximately 30 minutes per pound of meat, or until the internal temperature reaches your preferred doneness medium-rare is about 135 degrees Fahrenheit or 57 degrees Celsius

When finished, take the prime rib out of the smoker and give it a good 15 to 20 minutes to rest before carving

The smoked prime rib should be sliced and served with your preferred sides
