BLT Chopped Salad with Corn, Feta Avocado
This chopped salad is a tasty take on the classic BLT sandwich. It has crunchy Romaine lettuce, juicy cherry tomatoes, sweet corn, creamy avocado, salty feta cheese, and crispy bacon. A sour ranch dressing ties it all together.
Ingredients:
- 2 cups chopped Romaine lettuce
- 1 cup cherry tomatoes, halved
- 1/2 cup cooked corn kernels
- 1/4 cup crumbled feta cheese
- 1 ripe avocado, diced
- 4 slices bacon, cooked and crumbled
- 1/4 cup red onion, finely chopped
- 1/4 cup ranch dressing
- Salt and pepper to taste
Instructions:
Chop the Romaine lettuce, cherry tomatoes in half, cooked corn kernels, feta cheese, avocado, bacon, and red onion into small pieces
Put the salad ingredients in a large bowl
Pour the ranch dressing over the salad and toss it gently to cover everything
