Fresh Fruit Tart

This fresh fruit tart is a delightful combination of buttery crust, sweet apricot glaze, and vibrant fresh fruit. Its perfect for showcasing the best of seasonal produce and makes for an elegant dessert.

Ingredients:

  • 1 cup all-purpose flour
  • 1/3 cup confectioners sugar
  • 1/4 teaspoon salt
  • 6 tablespoons unsalted butter, cut into 1/2-inch pieces and chilled
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/2 cup apricot preserves
  • Assorted fresh fruit such as berries, kiwi, and peaches, washed, peeled, and sliced if necessary

Instructions:

Preheat oven to 375F 190C

In a food processor, pulse flour, confectioners sugar, and salt until combined

Add chilled butter and pulse until mixture resembles coarse meal

In a small bowl, whisk together egg yolks and vanilla extract

With the food processor running, slowly pour in egg mixture until dough forms

Transfer dough to a lightly floured surface and knead briefly until smooth

Press dough evenly into bottom and up sides of a 9-inch tart pan with removable bottom

Place tart pan on a baking sheet and bake until crust is golden brown, about 20 minutes

Cool crust completely on a wire rack

In a small saucepan, heat apricot preserves over low heat until melted and smooth

Brush cooled crust with a thin layer of apricot preserves

Arrange fresh fruit decoratively over the preserves

Reheat remaining preserves if necessary and brush over the fruit to glaze

Chill tart for at least 1 hour before serving
