Gluten-Free Keto Butter Chicken

This version of butter chicken is gluten-free and keto-friendly. It is made with tender chicken thighs cooked in a rich, creamy tomato sauce. Excellent for a filling meal that fits your low-carb way of life.

Ingredients:

  • 1 lb chicken thighs, boneless and skinless, cut into bite-sized pieces
  • 1 tablespoon ghee
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper adjust to taste
  • 1 cup canned diced tomatoes
  • 1/4 cup heavy cream
  • 2 tablespoons almond flour
  • Salt, to taste
  • Pepper, to taste
  • Fresh cilantro, chopped, for garnish

Instructions:

Warm the ghee in a cast iron pan over medium-low heat

Put in the chopped onion and cook for about 5 minutes, until it gets soft

When you add the minced garlic and ginger, cook for one more minute or until the food smells good

Put the chicken pieces in the pan and cook for 5 to 7 minutes, or until they are browned on all sides

Add the ground cayenne pepper, cumin, coriander, and turmeric

Mix well and cook for one more minute

Mix the diced tomatoes with the chicken and spices in the pan after adding them

Turn down the heat and let it simmer for 10 minutes, stirring every now and then

Mix the heavy cream and almond flour with a whisk in a small bowl until the mixture is smooth

Add the cream mixture to the pan and stir it in with the chicken and sauce

Keep cooking for five more minutes, or until the sauce gets a little thicker

Add pepper and salt to taste

Before serving, sprinkle with chopped fresh cilantro
