Gluten-Free Loaded Potato Skins
What can be better than potatoes, bacon, ranch, and cheese These loaded potato skins are gluten-free and bursting with flavor. They make for a perfect appetizer or snack for any occasion.
Ingredients:
- 4 large russet potatoes
- 6 slices bacon, cooked and crumbled
- 1 cup shredded cheddar cheese
- 1/2 cup ranch dressing
- 2 green onions, thinly sliced
Instructions:
Preheat oven to 400F 200C
Scrub potatoes and pierce them with a fork
Place them on a baking sheet and bake for 45-60 minutes, or until tender
Once potatoes are cool enough to handle, cut them in half lengthwise
Scoop out the flesh, leaving about 1/4 inch around the edges
Place the potato skins back on the baking sheet
Brush with olive oil and bake for an additional 10 minutes, until crispy
Remove potato skins from the oven
Fill each with shredded cheese and bacon
Return to the oven and bake for 5-10 minutes, or until the cheese is melted and bubbly
Drizzle ranch dressing over the top of each potato skin and sprinkle with sliced green onions
Serve hot and enjoy
