Spicy Thai Coconut Soup

An aromatic and fiery soup with succulent shrimp, earthy mushrooms, and creamy coconut milk.

Ingredients:

  • 1 tbsp vegetable oil
  • 1 onion sliced
  • 2 cloves garlic minced
  • 1 tbsp grated ginger
  • 2 tbsp red curry paste
  • 4 cups chicken broth
  • 1 can 14 oz coconut milk
  • 1 lb shrimp peeled and deveined
  • 2 cups sliced mushrooms
  • 2 tbsp fish sauce
  • 2 tbsp lime juice
  • 1 tsp brown sugar
  • Fresh cilantro for garnish

Instructions:

In a large pot, heat vegetable oil over medium heat

Add onion, garlic, and ginger, cook until fragrant

Stir in red curry paste and cook for 1 minute

Add chicken broth and coconut milk, bring to a simmer

Add shrimp and mushrooms, cook until shrimp is pink and cooked through

Stir in fish sauce, lime juice, and brown sugar

Garnish with fresh cilantro before serving
