Cashew Honey Blackberry Muffin Pancakes

Enjoy the wonderful mix of cashew nuts, honey, and juicy blackberries in these light and fluffy pancakes. This is a great treat for breakfast

Ingredients:

  • 1 cup all-purpose flour
  • 2 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup cashews, chopped
  • 1/2 cup blackberries
  • 1/2 cup milk
  • 1/4 cup honey
  • 1 egg
  • 1 tsp vanilla extract
  • Butter or oil for cooking

Instructions:

In a bowl, mix flour, sugar, baking powder, baking soda, and salt

In another bowl, whisk together milk, honey, egg, and vanilla extract

Combine the wet and dry ingredients, then fold in chopped cashews and blackberries

Heat a skillet or griddle over medium-high heat and grease with butter or oil

Pour 1/4 cup of batter onto the hot skillet for each pancake

Cook until bubbles form on the surface, then flip and cook the other side until golden brown

Serve hot with extra honey and blackberries as toppings
