Low Carb Cabbage Chicken Taco Soup
A flavorful and hearty soup with tender chicken, shredded cabbage, and taco-inspired seasonings. This low carb version of taco soup is packed with protein and fiber while being keto-friendly and delicious.
Ingredients:
- 1 lb chicken breast, diced
- 1 small head cabbage, shredded
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can 14 oz diced tomatoes
- 4 cups chicken broth
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- Optional toppings: avocado, sour cream, shredded cheese, cilantro
Instructions:
In a large pot, heat some olive oil over medium heat
Add diced chicken breast and cook until browned
Add diced onion and minced garlic, cook until onion is translucent
Stir in shredded cabbage and cook for a few minutes until slightly wilted
Add diced tomatoes, chicken broth, chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper
Bring the soup to a simmer, then reduce heat and let it cook for about 20-25 minutes, or until the cabbage is tender and the flavors are well combined
Taste and adjust seasoning if needed
Serve hot, optionally topped with avocado, sour cream, shredded cheese, and cilantro
