Sweet Potato Shepherds Pie
Ingredients:
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 1 cup frozen peas
- 1 cup beef broth
- 2 tbsp tomato paste
- 2 tbsp Worcestershire sauce
- 2 tbsp all-purpose flour
- 2 large sweet potatoes, peeled and cubed
- 2 tbsp butter
- 1/4 cup milk
- Salt and pepper to taste
- Fresh parsley for garnish optional
Instructions:
Warm the oven up to 190C 375F
Use medium-low heat to brown ground beef with chopped onion and garlic in a skillet
Keep cooking until the meat is done
After 5 minutes, add diced carrots and frozen peas to the pan and cook them for another 5 minutes
Add the flour, Worcestershire sauce, tomato paste, and beef broth and mix well
Simmer for about 5 minutes, or until it gets thicker
Add pepper and salt to taste
While that is going on, boil sweet potatoes in water for about 15 minutes, or until they are soft
Put the potatoes in a bowl and add butter, milk, salt, and pepper
Mash the potatoes until they are smooth
Put the beef mixture in a baking dish and top it with mashed sweet potatoes
After the oven is hot, bake the sweet potatoes for 25 to 30 minutes, or until they are lightly golden
If you want, you can add fresh parsley as a garnish before serving
