Chicken Parm Burgers
Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper to taste
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup marinara sauce
- 4 slices mozzarella cheese
- 4 hamburger buns
- 1/4 cup fresh basil leaves
- 1/4 cup olive oil
- 1/4 cup grated Parmesan for garnish
Instructions:
Add salt and pepper to the chicken breasts
Grate 1/2 cup of Parmesan cheese and put the breadcrumbs in a shallow bowl
In a third shallow bowl, beat the eggs and put them in while the flour is in the first bowl
First coat each chicken breast in flour, then in beaten eggs, and finally in the breadcrumb mixture
Press the breadcrumbs onto the chicken to make them stick
Put olive oil in a big skillet and heat it over medium-high heat
Before adding the chicken breasts, make sure they are golden brown and fully cooked
This should take about 4 to 5 minutes per side
Warm up the broiler while the chicken is cooking
Spread marinara sauce over each cooked chicken breast and top with a slice of mozzarella cheese
Place the chicken breasts on a baking sheet
Put the baking sheet under the broiler and broil for about two to three minutes, or until the cheese melts and bubbles
For one or two minutes, toast the hamburger buns in the oven
In order to make the burgers, put a chicken breast on each bun and top with grated Parmesan cheese and fresh basil leaves
Enjoy while hot
