Lemon Almond Springerle Cookies

Lemon almond springerle cookies with a nutty flavor and a hint of citrus. Perfect for springtime get-togethers or as a tasty treat with tea or coffee.

Ingredients:

  • 2 cups almond flour
  • 1 cup powdered sugar
  • 2 large eggs
  • 1 tsp lemon zest
  • 1/2 tsp almond extract
  • 1/4 tsp baking powder

Instructions:

Put almond flour and powdered sugar in a bowl and mix them together

Mix in the eggs until a dough forms

Be sure to mix in the baking powder, almond extract, and lemon zest

Place the dough in the fridge for one hour while its wrapped in plastic wrap

Prepare the oven by heating it up to 325F 165C

The dough should be rolled out to about 1/2-inch thick

To make shapes in the dough, press springerle molds into it

Put the cookies on a baking sheet and cut around the molds

Dry the cookies in the air for about half an hour

Wait 12 to 15 minutes before taking the cookies out of the oven

They should be set but not brown

Set the cookies on a wire rack to cool down before you serve them
