Dan Dan Noodles with Shrimp
Ingredients:
- 8 oz fresh or dried Chinese egg noodles
- 12 large shrimp, peeled and deveined
- 2 cloves garlic, minced
- 1-inch piece of ginger, minced
- 2 green onions, chopped
- 2 tablespoons vegetable oil
- 2 tablespoons sesame oil
- 2 tablespoons soy sauce
- 1 tablespoon Sichuan peppercorns optional for spiciness
- 2 tablespoons creamy peanut butter
- 1 tablespoon rice vinegar
- 1 tablespoon brown sugar
- 1/4 cup chicken broth
- 1/4 cup chopped cilantro
- Chopped peanuts for garnish optional
Instructions:
As directed on the package, boil a pot of water and cook the Chinese egg noodles until they are al dente
After draining, set aside
To make the sauce, combine the soy sauce, peanut butter, sesame oil, rice vinegar, brown sugar, and chicken broth in a small bowl
Put aside
Heat the vegetable oil in a wok or big skillet over medium-high heat
Add the ginger, green onions, and minced garlic
Stir-fry until fragrant, about 1 minute
When the shrimp are pink and opaque, add them to the wok and stir-fry for two to three minutes
Stir-fry Sichuan peppercorns for one more minute in the wok, if you like your food spicy
After the noodles are cooked, add them to the wok and cover them with sauce
Mix everything together to coat the noodles uniformly, then cook for two to three minutes
Spoon the shrimp and Dan Dan noodles into individual serving bowls
Garnish with chopped peanuts and cilantro, if preferred
