Double Chocolate Cupcakes with White Chocolate Cream Cheese Frosting
Ingredients:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 1/2 cup hot water
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup semisweet chocolate chips
- For the frosting:
- 4 oz white chocolate, chopped
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
- Pinch of salt
Instructions:
Preheat your oven to 350F 175C
Line a muffin tin with cupcake liners
In a mixing bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt
Add the vegetable oil, eggs, and vanilla extract to the dry ingredients
Mix until well combined
Stir in the buttermilk until the batter is smooth
Pour in the hot water and mix until the batter is smooth and well combined
The batter will be thin
Fold in the semisweet chocolate chips
Fill each cupcake liner about 2/3 full with the batter
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean
Remove the cupcakes from the oven and let them cool in the muffin tin for a few minutes before transferring them to a wire rack to cool completely
For the frosting, melt the white chocolate in a microwave-safe bowl, stirring every 20 seconds until smooth
Let it cool slightly
In a separate bowl, beat together the cream cheese and butter until creamy and smooth
Add the melted white chocolate, powdered sugar, vanilla extract, and a pinch of salt to the cream cheese mixture
Beat until the frosting is well combined and fluffy
Once the cupcakes are completely cool, frost them with the white chocolate cream cheese frosting
