Kookoo Sabzi - Persian Herb Frittata

A traditional Persian dish called Kookoo Sabzi is made with fresh herbs and eggs, which make a tasty and healthy frittata. This recipe is a treasured family tradition that was passed down from my mother. It goes well with any meal.

Ingredients:

  • 2 cups chopped mixed fresh herbs such as parsley, cilantro, dill, and chives
  • 4 large eggs
  • 1/2 teaspoon ground turmeric
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions:

Put the chopped herbs, eggs, ground turmeric, salt, and pepper in a large bowl

Stir the ingredients together with a whisk until the eggs are well beaten and everything is well mixed

In a nonstick skillet over medium heat, heat the vegetable oil

Spread out the herb and egg mix in the pan after adding it

As soon as the bottom turns golden brown and the edges start to set, the food is done

Putting a lid on the skillet will help cook the top

Use a large plate or lid to carefully flip the frittata over

Cook the other side for another 10 to 15 minutes, or until its fully cooked and golden brown

After the Kookoo Sabzi is done cooking, put it on a serving plate and let it cool down a bit before cutting it into wedges

The Persian Herb Frittata is a tasty and healthy side dish that can be served hot or at room temperature
