Winter Warmup - Hot Chocolate Pancakes

Indulge in the cozy flavors of winter with these hot chocolate pancakes. They are a delightful treat on a cold morning and perfect for a winter warmup.

Ingredients:

  • 1 cup all-purpose flour
  • 2 tablespoons cocoa powder
  • 2 tablespoons granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1/4 cup hot chocolate mix
  • 1 egg
  • 2 tablespoons melted butter
  • 1/2 teaspoon vanilla extract
  • 1/4 cup mini marshmallows optional
  • 1/4 cup chocolate chips optional
  • Whipped cream for topping optional
  • Chocolate syrup for drizzling optional

Instructions:

In a mixing bowl, combine the all-purpose flour, cocoa powder, granulated sugar, baking powder, baking soda, and salt

In a separate bowl, mix the buttermilk, hot chocolate mix, egg, melted butter, and vanilla extract until well combined

Pour the wet ingredients into the dry ingredients and stir until just combined

Be careful not to overmix; some lumps are okay

Preheat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray

Pour 1/4 cup of pancake batter onto the skillet for each pancake

If desired, add mini marshmallows and chocolate chips to each pancake

Cook until bubbles form on the surface, then flip and cook the other side until its golden brown and cooked through

Remove the pancakes from the skillet and keep warm

Repeat the process with the remaining batter

Serve the hot chocolate pancakes with whipped cream, chocolate syrup, and extra marshmallows if you like
