Flourless Chocolate Cake with Espresso Glaze: A Love Affair Cookies

With these delectable cookies, indulge in the exquisite combination of rich flourless chocolate cake and the bold flavors of espresso glaze. Ideal for chocolate and coffee enthusiasts

Ingredients:

  • 1 cup semisweet chocolate chips
  • 1/2 cup unsalted butter
  • 3/4 cup granulated sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup brewed espresso, cooled
  • 1/2 cup heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon cocoa powder
  • 1/2 teaspoon instant espresso powder
  • Pinch of salt

Instructions:

Preheat your oven to 375F 190C

Grease a mini muffin tin or line with mini cupcake liners

In a microwave-safe bowl, melt the semisweet chocolate chips and butter together in 20-second intervals, stirring until smooth

Stir in the granulated sugar, cocoa powder, and salt into the melted chocolate mixture

Add the eggs one at a time, mixing well after each addition

Stir in the vanilla extract

Fill each mini muffin cup about two-thirds full with the batter

Bake in the preheated oven for about 10-12 minutes, or until the tops are set and a toothpick inserted into the center comes out slightly moist with crumbs

Allow the mini flourless chocolate cakes to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely

For the espresso glaze, whisk together brewed espresso and heavy cream in a small saucepan

Bring to a simmer

In a separate bowl, sift powdered sugar, cocoa powder, instant espresso powder, and a pinch of salt

Slowly pour the espresso mixture into the dry ingredients, whisking constantly until smooth and glossy

Let the glaze cool for a few minutes to thicken slightly

Dip the tops of the mini flourless chocolate cakes into the espresso glaze, allowing any excess to drip off

Place the glazed cakes back on the wire rack to set the glaze
