Quinoa Veggie Loaf with Sweet Ketchup Glaze
This vegan quinoa veggie loaf is very simple to make and has lots of healthy ingredients. It has a sweet ketchup glaze on top. This dish is warm and tasty, and its great for a full meal.
Ingredients:
- 1 cup cooked quinoa
- 1 cup grated carrots
- 1 cup finely chopped mushrooms
- 1 cup cooked lentils
- 1/2 cup finely chopped onions
- 1/2 cup chopped spinach
- 2 cloves garlic, minced
- 1/4 cup nutritional yeast
- 1/4 cup tomato paste
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 tablespoon ground flaxseed mixed with 3 tablespoons water flax egg
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/4 cup ketchup
- 2 tablespoons maple syrup
- 1 tablespoon apple cider vinegar
Instructions:
Before you start cooking, heat the oven to 375F 190C
Put cooked lentils, onions, spinach, garlic, nutritional yeast, tomato paste, soy sauce, olive oil, flax egg, thyme, oregano, salt, and pepper in a large bowl
Mix the ingredients together
Put the mixture in a loaf pan that has been lined with parchment paper and press it down hard
Take a small bowl and mix ketchup, maple syrup, and apple cider vinegar with a whisk
This will make the glaze
Cover the top of the veggie loaf with the glaze
Before you put the loaf in the oven, heat it up
Bake it for 35 to 40 minutes, or until the top is golden brown and firm
Let the loaf cool down for a few minutes before cutting it up and serving it
