Beef Tongue in Creole Marinade

Filipina Hookup Waukesha

Beef tongue is a delicacy in many cultures, and this recipe infuses it with the vibrant flavors of a traditional Creole marinade. The tongue is boiled until tender, then marinated in a zesty mixture of sour orange juice, garlic, spices, and herbs before being grilled to perfection. The result is tender, juicy slices of beef tongue bursting with flavor.

Ingredients:

  • 1 beef tongue about 3-4 pounds
  • 1 cup sour orange juice or substitute with 3/4 cup orange juice 1/4 cup lime juice
  • 1/2 cup olive oil
  • 1 onion, finely chopped
  • 4 garlic cloves, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped parsley

Instructions:

In a large pot, bring water to a boil and add the beef tongue

Reduce heat to a simmer and cook for about 2-3 hours until tender

Once tender, remove the tongue from the pot and allow it to cool slightly

Peel off the outer layer of skin and slice the tongue thinly

In a bowl, mix together the sour orange juice, olive oil, onion, garlic, oregano, cumin, paprika, black pepper, salt, cilantro, and parsley to make the Creole marinade

Place the sliced tongue in a shallow dish and pour the Creole marinade over it, ensuring each piece is well coated

Cover and refrigerate for at least 2 hours or overnight to marinate

Preheat the grill to medium-high heat

Remove the tongue from the marinade and grill for about 5-7 minutes on each side, until nicely charred and heated through

Serve the grilled beef tongue slices with your favorite side dishes and enjoy
